Quick Easy Bread

1/4 cup milk-free-coy-free margarine, softened
1 cup dark brown sugar, firmly packed
1 1/2 T. water, 1 1/2 T. oil, 1 tsp. baking powder, mixed together
2 tsp vanilla extract
2 cups flour

2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup orange juice
1/2 cup water


Preheat over to 350 degrees. Grease and lightly flour 9x5-inch pan. Set aside. In large bowl, cream together margarine and sugar. Stir in water, oil and baking powder mixture; and vanilla extract. Stir in flour, baking soda, salt, orange juice and water. Pour batter into prepared pan. Bake 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes. Transfer to wire rack to cool completely.

Suggestion: Stir in your favorite dried fruit before baking.

Note: To boost calcium intake, use a calcium-fortified orange juice
