Pear Cardamom Muffins

Main Ingredients

2 Cup Flour
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
15.25 Ounce Canned in syrup Pears
1/2 Cup Firmly Packed Dark Brown Sugar
1/4 Cup Firmly Packed Light Brown Sugar
1 Tbsp Sugar
3 Tbsp Egg Replacer
4 Tbsp Warm Water
1/4 Cup Oil
1 Tsp Ground Cardamom
1 Tsp Vanilla Extract


Main Directions

  1. Preheat oven to 400 degrees Farenheit
  2. Coat 12 muffin cups with cooking spray and set aside.
  3. In a large bowl, combine flour, baking powder, baking soda and salt
  4. Drain pears and reserve liquid. Dice pears and set aside.
  5. In another bowl, combine sugars
  6. Dissolve Egg Replacer in warm water in another bowl.
  7. Whisk egg mixture into sugars and blend until smooth.
  8. When smooth, whisk in reserved pear liquid, oil, caramom and vanilla extract.
  9. Make a well in the dry ingredient mixture
  10. Stir until just combined.
  11. Fold in pears.
  12. Spoon batter into prepared muffin cups until 2/3 full.
  13. Bake 15-20 minutes
